I woke up at 5 AGAIN this morning! I don’t think I fell asleep until 12 last night and I’m not doing well on 5 hours of sleep! I’ve been lagging all day looooong. I had an interview scheduled at 9 this morn in La Jolla, so I think I got up early in fear of over sleeping. The good news is that the suit I bought few weeks ago is getting loose. I guess I really shouldn’t buy nice clothes until I’m done loosing weight. The jacket still fits perfectly, but the pants were a little baggy. I suppose I’ll be getting those altered soon.

I wasn’t really hungry when I woke up. Actually I didn’t get hungry until I was running out the door at 7…of course! The smart thing to do would have been to force myself to eat something or made a green monster. But no. As I’m walking out the door I stop and grab an apricot Clif bar and tell myself that and a coffee would make an excellent breakfast. Yes, I stopped at Starbucks too and grabbed myself a fat free caramel macchiato…fat free, yes…sugar free, no. Far from the breakfast of champions this morn.

I picked Matt up again for lunch today. We decided on Islands and split a BBQ chicken salad. Actually I had about 1/3 and he had the rest. I also gave him the bread that came with it. Oh and I added a small scoop of guacamole to my salad…so good!! (sorry for such a dark pic)

I’m lacking the photo, but this afternoon I nibbled on some carrots.

For dinner I tried out a recipe from Ellie Krieger for Teriyaki Chicken Thighs. I made the marinade, let the chicken meld in it for a couple of hours and then threw it on the grill. It was really tasty. I used boneless skinless chicken thighs, which isn’t something I would usually buy. But i figured it wouldn’t hurt once in a while. Next time I think I will make a little extra marinade and use it as a sauce one the chicken is cooked. Anyways, I ended up eating one chicken thigh (they were really small) and about half the rice pictured. I also had a couple tempura veggies from Trader Joe’s on the side.

It is so super hot here tonight and Matt had to go and mention that a smoothie would cool us off. So we headed over to Juice It Up and grabbed a couple of smoothies. I got a Sunrise Splash with protein added. It’s going to take me all night to drink this sucker! Of course I could have made my own smoothie here for way cheaper, but where’s the fun in that?

Note to self: Please add more veggies into your day.

 
 

One Year June 30, 2009

This time last year I was having RNY Gastric Bypass surgery. Wow, the year has just flown by! I couldn’t be happier at this point after my surgery and I don’t regret one second of it. The hardest part has been finding a balance in my food intake and I am still far from perfect. I am working hard to make the “right” or “better” choices when I eat. And that is my focus right now. Like I said, I am far from perfect.

To date I have lost a total of 113.5 pounds. That is exactly 40% of my starting body weight. I am 20 pounds away from my goal weight and if i work hard enough I think I can reach that by the end of the year.

I haven’t made it to my 1 year post op appointment yet, so I will update again after that is done. Here’s to another great year!

Here’s a comparison shot for you. I just took the photo on the bottom tonight. I’m so tired, so I’m sure I don’t look my best! But I wanted to get this posted tonight!!

ALMOST hump day.

Today has been such a busy day! I had to drive down to San Diego for work and then I had a stupid dentist appointment this afternoon that took 2 hours!

I started my day with a green monster! I added 2 scoops of protein powder to today’s mix. These things are so tasty!

For a mid-morning snack I had 2 of the Fig Newmans pictured below while driving. Probably not so safe to be taking pictures while driving!

I had lunch with Matt today at Indigo Cafe. I ordered the California Wrap which included grilled chicken, avocado, ranch, pepperjack cheese and lettuce. The wrap was jalapeno flavored. It also came with a small Caesar salad on the side. So good! I ate half the wrap at lunch and half the salad. Then I ate another 1/4 of the wrap for snack around 2:30.

I also enjoyed an iced coffee with ff milk this afternoon while waiting for Matt to get off work!

Got home late from the dentist and didn’t feel like cooking, so I reheated an enchilada from last night. I added about a teaspoon of sour cream to the top and ended up eating 1/2 an avocado. I didn’t finish the enchilada…maybe left 1/4.

Snack was quick and easy…peanuts!!

My plan this morning was to make a green monster, but I was too lazy. I decided to go with an iced coffee and another mini croissant instead. Hardly the breakfast of champions.

Lunch wasn’t much better. I had ANOTHER croissant. I will be glad when these things are gone! I ended up using a croissant to make a sandwich which consisted of a slice of provolone, turkey, a slice of bacon and a little mayo. Nothing green was harmed in the making of my sandwich. I only ended up eating about 2/3 of the sandwich.

This afternoon I enjoyed some cherries!

I tried out a new recipe for dinner tonight. I made PW’s Enchiladas! I did end up splitting the recipe in half since I’m not feeding an army here. The only real change I made was that I didn’t fry the tortillas; I simply heated them up on my skillet with a little olive oil spray. I also cut back on the cheese a little. They turned out really good and I will have to make them again. I had one for dinner with a small side of cilantro-lime rice (not pictured).

I’m feeling a little guilty that I haven’t had any green stuff today, so for dessert tonight I mad a giant green monster. I added a ton of spinach and I think it tastes a little off tonight. But I’ll power through. With the green monster I’m also having some of my homemade nutty granola…recipe to come!

 
 

Lazy Sunday

My Sunday was pretty uneventful Here’s a quick rundown of what I ate…

Breakfast was a green monster! mmm, LOVE these!! And a fresh mini croissant. I bought the frozen mini croissants from Trader Joe’s. They are super good. You just let them proof over night then bake them in the morning. So easy!

Lunch was at The Hot Dog Shoppe in Temecula. This place is insane; they have so many different varieties of hot dogs! I shared a Reuben Dog and a Gabe’s Choice dog with Matt. The Reuben is a regular hot dog topped with pastrami, swiss cheese, kraut and 1000 island dressing. Gabe’s Choice is a polish dog wrapped in bacon then topped with cheddar, swiss and grilled onions. They are crazy good! I ate about 1/3 of each.

We also shared the Texas Mac n Cheese. Which is just mac n cheese mixed with chili. I was so busy eating that I forgot to take a pic until the very end.

Since lunch was a little hefty, I opted for a light dinner. I made one of my faves…shrimp tacos! I just saute the shrimp in a little olive oil and sprinkle it with some Old Bay seasoning. Once it’s done cooking I sprinkle with lime juice. I also make chipotle sour cream to go with them. I just chop up a chipotle from a can then mix it with sour cream. I topped my taco with shredded cabbage. These are so light and yummy, perfect for summer!

For snack I had a couple of Newman’s Own Fig Newmans. I wasn’t expecting this to be soft but they were perfectly soft and tasty!

 
 

Hot Hot Hot! June 27, 2009

Today hasn’t been a super healthy eating day, but sometimes you just have to live life! I started my day by splitting a strawberry-banana protein shake with Matt. We also split a sourdough English muffin topped with low sugar preserves. Here are my portions…

We were at the mall and decided that we would stop in Yard House for lunch and a cocktail. I had a mango martini then we split an order of the Moo Shu Egg Rolls. Both were excellent! Oh and Matt had some type of IPA that I can’t remember the name of.

After we came home Matt decided he needed a nap, so I thought that I would try taking a nap outside. That lasted about half an hour…it was just way too hot! So I came inside and cooled off with a few bites of some Peach sorbet.

We also found ourselves out and about when dinner rolled around tonight, so we stopped by Chick-fil-A. I ordered the grilled chicken sandwich with fruit and an unsweetened iced tea. So good! I ended up eating about half of the sandwich and most of the fruit. I may have also snuck a few of Matt’s fries.

Happy Hump Day June 24, 2009

I think my stomach is still recovering a little bit from yesterday. I have had stomach aches off and on all day. However, I still managed to EAT…no surprise there!

Breakfast was a serving of Peanut Butter Puffins with 1/2 cup 2% milk. On the side I had a small smoothie made with 1/2 frozen banana, 4 frozen strawberries, 1/2 cup orange-mango juice and 1 T protein powder. It turned out pretty good!

I used up last nights left overs for my lunch. I cooked a small serving of orzo, then let it cool. I then chopped up the leftover veggies and chicken and tossed them with the orzo. I then drizzled some Annie’s Italian dressing over it and mixed it all together. It was super good and I gobbled the entire bowl full!

Afternoon snack was an iced coffee and some almond butter stuffed dates.

For dinner I made a tiny lean hamburger patty topped with a half slice of cheddar and some grilled onions. On the side I had a few slices of avocado and a small tomato slice. I also had a few oven baked garlic fries. Oh and I finished dinner off with a crisp dill pickle spear!

And last but not least I also had a Clif Kid Twisted Fruit for snack tonight.

Not pictured are the few tastes of the vanilla buttercream frosting I made tonight. Hey, I have to sample my creations!!

 
 

Crappy Day June 23, 2009

My stomach has been upset with me since lunch today. I’m wondering if it’s all these Green Monsters I have been drinking! Maybe all this spinach is catching up with me. I think I will skip it tomorrow and see if I feel any better. Anyways, here’s what my day looked like…

For breakfast I had another Green Monster.

Lunch was a sandwich. I had turkey, sprouts, tomato and humus on a sandwich thin. I think I like it better yesterday with the spinach instead of the sprouts.

I started off my afternoon snack with a Kashi Roll…I took 2 small bites and tossed it. I was not a fan. So, I traded that in for a few tiny dates stuffed with almond butter. So good!!

Dinner was half a small chicken breast with BBQ sauce. I also grilled up some zucchini, onion and baby bellas that I had “marinated” in Annies Italian dressing. Also a small serving brown rice. Nothing too special, but I enjoyed the healthiness of it.

Snack tonight was my remaining macadamia nuts…and a small handful of gummy bears. These have been in the house for several weeks and those were the first I have had. And I don’t even want anymore!

I’ve decided to try logging my daily food intake again. I think it helps me keep accountable, plus it’s kinda fun!

Today I started off with my new favorite breakfast…a Green Monster smoothie!! I’ve been seeing this smoothie pop up on so many health/food blogs lately and I had to try it for myself. They are so good! I think it pretty much tastes like a slightly nutty banana smoothie.

I blended together:
1 cup of unsweetened vanilla almond milk
1 frozen banana
Big handful of spinach
Scoop of unflavored protein powder
2-3 ice cubes

For lunch I had a turkey sandwich. I had deli peppered turkey breast, humus and spinach on a multi-grain sandwich thin. I also had some fresh-from-my-garden cherry tomatoes! I ended stuffing the tomatoes in my sandwich as I ate it. This was actually a lot of food for me to eat, but it was so good! And it kept me full for several hours.

I ended up having a late afternoon snack of 3 dates stuffed with some almond butter…looks like I squashed a few cockroaches and put them in my bowl, but it’s actually a pretty tasty snack!

It was taco night in my house! I had a lean ground beef taco stuffed with a tiny bit of sour cream and a pretty big scoop of guacamole. I also had about a spoonful of refried beans and some cheese.

Snack tonight included a grande iced coffee with nonfat milk and sugar free caramel syrup. I also snacked on a package of Annie’s bunny grahams. yums!!
